Grilled Jalapeño, Corn and Bacon Idaho® Potato Salad  

With Fourth of July celebrations right around the corner, it’s time to kick up the heat and impress your guests with the Grilled Jalapeño, Corn and Bacon Idaho® Potato Salad. This recipe pairs perfectly with hot dogs or hamburgers and features a variety of zesty ingredients. The bacon, Idaho® potatoes, onions and corn are grilled on the barbecue and then tossed with a spicy dressing that includes jalapeños, sour cream, cilantro and garlic. The Big Idaho® Potato Truck Visits Indianapolis Motor Speedway

 

The Big Idaho® Potato Truck tour is in full swing! In May, the Truck made a pit stop at the Indianapolis Motor Speedway for the ProMazda Series 6 Race. This famous speedway is known for its iconic Pagoda - the most recognized structure in worldwide motorsports! The Pagoda (pictured above) is a state-of-the-art tower with nine tiers that reaches a height equal to a 13-story building. The tower is centered on the raceway’s start/finish line and is used for race control, safety, timing, scoring and radio broadcast booths. Spud-loving motorsport fans enjoyed hanging out with the Tater Team and contributing to the Truck’s charitable component, ‘A Big Helping’, which raised funds for the local Kids On Track program. Classic Idaho® Potato Low Country Boil Packets

 

This time of year is filled with celebrations for Dads and Grads! Show them some love with our crowd-pleasing Classic Idaho® Potato Low Country Boil Grill Packets. This hearty dish is made with Idaho® potatoes, fresh corn, shrimp and Andouille sausage, marinated in lemon, olive oil and Old Bay seasoning. Wrap these ingredients in a foil packet and throw them on the grill for a quick and delicious smoked, BBQ-flavored meal.

Q: I am hosting Father’s Day dinner and would like to add baked potatoes to the menu. I am already planning to cook a ham in the oven at 250°F. If I bake potatoes at the same time as the ham, how long will it take?  

A: The more dishes you put in the oven, the longer it will take to cook. I’d allow the Idaho® potatoes two hours to cook alongside the ham. If they’re not fully done after two hours, you can always put them in the microwave to finish.

If you are not baking two food items at once, the typical oven temperature for baking an Idaho® potato is 400°F. A potato is fully cooked when it reaches 210°F.
