Curried Potato and Broccoli Soup

As the chilly months begin to settle in, it's time to start thinking about recipes that will warm you up when the temperatures begin to drop. And, nothing warms you up quicker than a piping hot bowl of soup. This thick and hearty Curried Potato and Broccoli Soup has a medley of robust flavors that celebrate the arrival of fall. Made with chicken stock, broccoli florets, Idaho® potatoes, milk, curry, garlic powder, onions, and butter, this spud-sational soup will make you feel cozier than snuggling up next to a crackling fire.

Thank a Farmer: Brett Jensen

This month’s featured farmer is Brett Jensen from Idaho Falls. Brett, a third generation farmer, and his wife Kristy have six kids - Jace, Rylee, Brayden, Karsen, Bella, and Sophie (his daughter-in-law). Brett started Brett Jensen Farms right out of college. He’s proud to be an Idaho® potato farmer and hopes his family will someday help him run the business. His favorite way to eat an Idaho® potato is baked with a pat of butter.

Roasted Idaho® Potato Hummus Bowl

Fresh, healthy, and vibrant, this Roasted Idaho® Potato Hummus Bowl from food blogger Lisa Lin is the perfect dish to pack for lunch, especially since it’s so easy to prep the night before.
