Creamed Peas, Potatoes, and Ham
*Simple Southern Goodness
1 lb. red or russett potatoes, scrubbed and cubed
2 1/2 cup frozen peas
1/4 cup butter
1-2 green onions, sliced (can use 2 Tablespoons dried chives instead)
1/4 cup flour
1/2-1 teaspoon salt (I like to use garlic salt)
Pepper to taste
2 cups milk
1 cup diced ham
Boil potatoes for 10-15 minutes, adding the peas for the last 3-4 minutes. While they are boiling melt the butter in another saucepan and melt over medium heat. Add flour and spices; mix until combined and slowly add milk, stirring constantly. Drain the peas and potatoes and pour the sauce over them, stirring gently just until combined. Mix in diced ham.
