Here in Idaho we LOVE Italian food! And at this time of year one of our favorite recipes is Vegan Wild Mushrooms, Roasted Garlic and Idaho® Potato Calzone. It’s packed with nutritious veggies, helping us stick to some of our New Year's resolutions to eat healthier! This calzone is a delicious combination of Idaho® potatoes, mushrooms, onions, garlic, and thyme. Adding spinach or tomatoes gives it an extra nutritional boost and makes us love it even more.

Game day isn’t complete without a delicious Idaho® potato recipe to please even the pickiest eaters at your Super Bowl party. Wow your crowd with food blogger Lisa Lin’s Idaho® Potato Nachos with General Tso’s Chicken. This dish is made with Idaho® Russet potatoes, mozzarella cheese, fresh bell peppers and topped with tamari seasoned shredded chicken, shaoxing wine, vinegar, sesame oil, garlic, and red pepper flakes. (These ingredients can be found in the International Foods section of your local grocery store.) We suggest doubling the recipe, because the first batch may be gone before the game even starts!

Q: Why are my red potatoes yellow inside? And does this mean they’re not from Idaho?
A: Idaho grows several red potato varieties and some of the newer varieties have a yellow flesh instead of the usual white flesh.
