Greek Potato Salad

Ingredients

Potato, Cucumber and Dill Salad

Ingredients

• 3 large Idaho potatoes, unpeeled and thinly sliced
• 1/4 cup rice wine vinegar
• 1 1/2 tablespoons Dijon mustard
• 1/4 cup canola or vegetable oil
• 1/2 cup chopped fresh dill, or 1 tablespoon dried whole dill weed
• 1/2 teaspoon salt
• 1 large cucumber, unpeeled and thinly sliced

• 2 tablespoons mustard
• 1 tablespoon water
• 1/2 cup vinegar
• Juice of one lemon
• Fresh ground black pepper
• 2 cups olive oil
• Salt, to taste

Salad:

• 4 medium Idaho potatoes, peeled
• 1 medium yellow or orange pepper
• 1 medium onion
• 3/4 cup Mustard Vinaigrette
• Coarse salt and freshly ground pepper

PARK CITY, UT (June 10, 2014) — Park City’s iconic summer events return to Historic Main Street this season. The 0.8-mile stretch of shops, cafes, bars and restaurants will host music performances, arts festivals, outdoor dinner parties and much more.

Thursday, June 12th: "Pool Day" at the North Shore pool in North Ogden. 12:00 noon. Every Thursday throughout the summer!
Friday - Saturday June 13th - 14th:  Men's Summit in Layton
Sunday, June 15th: Father's Day. Every Father in attendance will get a special treat.
Saturday, June 21st: Men's Breakfast at the Farr West Cafe 8:00 am
Sunday, June 22nd: Men's Golf Outing at Ramuda Golf Course 1:00 pm
